A study that included 80 people with type 2 diabetes found that participants who supplemented with 100 milligrams of saffron per day for 12 weeks had significant reductions in blood levels of malondialdehyde (MDA), a marker of oxidative stress, compared to a control group.

Recipes of saffron

Saffron is used in many Iranian dishes but One of the most common correct ways to consume saffron is to brew it.

  1. For this, you need to grind the saffron strings. 
  2. Then pour the milled saffron powder in a small bowl or a glass 
  3. Now, add some boiling water to cover the saffron.
  4. Then cover it and let the saffron infuse for 30 minutes.

 

The next method is ice:

To melt saffron with ice and benefit from the color of this spice, first grind saffron. Then pour the saffron powder in a bowl or a glass and put a few pieces of ice on it. The amount of ice cubes depends on the amount of your saffron powder.

The ice should cover the saffron powder. Then, when the ice melts at room temperature, saffron returns the same color and dissolves in water.

 

What to Look for When Buying Saffron

Smell:

 “The smell should be distinguished and soft. The aroma should be floral, honey-like, with a slight sweetness to it—this is a measure of the element safranal in saffron,” she says. 

Taste:

 “The taste should be floral, sweet, and at the same time earthy. This is a measure of picrocrocin in saffron,” says Ghaffer.

Sight:

 “The appearance of saffron can be tested by adding water to saffron threads,” says Ghaffer. “If it starts coloring the water quickly, your saffron may be fake or low-quality; real saffron slowly turns the water into a yellow/golden color. This test measures the crocin of saffron.”

 

Why saffron is so expensive

Since such a small part of the flower is used, it takes 75,000 saffron flowers to make one pound of saffron spice. The small amount of saffron spice per plant, along with the fact that harvesting must be done manually, leads to saffron’s price being majorly expensive.

Do not forget that in order to benefit from all the properties of saffron, you must pay attention to the correct way of consumption and the amount of saffron consumption. Because if you do saffron correctly or if you consume more than allowed, not only will you not benefit from the properties of saffron, but it will also harm you.
